Whole30 School is in Session Edition #Choices #randmoness

Teachers are back folks. We are back to save the day and take your precious jewels and help them shine to their utmost potential. That being said, let me just say. OMG!! While we care for your children and demand healthy ways for them, we often do not take our own advice. Our days are often filled with yummy chocolates, pastries, and a plethora of other sugary goodness.


Monday’s in-service was no different.  We went on a staff bonding/team building session which included a potluck. It was a great time. I absolutely loved it. However, ladies and gents, I cannot tell you how many donuts and pigs in a blanket I had to pass up. It was crazy. I wish I would have taken a pic of all that tempting goodness! I do have to say that there was also a lot of fruits available and I did take that option. However, as teachers, we are often faced with sweets and treats. Am I wrong? It is all about #choices.

This is what I had during our staff potluck and I was just fine with it.


The next choice day came yesterday when our amazing PTA provided lunch for us. How amazing is that? They brought us chicken salad, Ceasar’s salad, chickpea salad, cookies, etc…Super nice of them. I, however, can not have all those amazing foods just yet. So, what choice did I have? I went to Taco Bell. Sounds crazy, right? Taco Bell? Yes, it is close to my school so I figured what the heck. I walked in and ordered the protein bowl without the beans, rice, cheese, sour cream, guacamole, and ranch sauce. I know, what the heck was left to the bowl? I had lettuce, chicken fajita, and pico de gallo. It was pretty darn good.

This is just the beginning of the new school year and there will be many choices that I will have to make when it comes to the foods that I choose to eat. But, I will continue to have a plan and push forward, no matter what kind of stresses come my way.


Not sure if you have been informed, but teaching can indeed be stressful. As a matter of fact, as I am typing this, I am wondering why I am not actually working on school work instead of writing here. It is late on a Friday night. Why should I be working on school work?  I can guarantee you that many teachers do the same though. We work for many hours and stress ourselves out because we want our students to know how much they mean to the world and how amazing they are. That’s it, plain and simple.


And you know what, now that I think about it, some of us do so as our own children get put on the back burner. I know, I slid off the rail there for a moment, going off on a tangent, but I had to put in a plug for our valuable profession. We are educators. We have graduate degrees. We have grit. We have knowledge. We have strength. We have love. We have stress.  And, that is all just fine with us. It’s what we do.

OK, I am done with my off-topic rant on how teachers need some respect. 🙂 Gotta love us.

Back to Whole30…

Whole30… I just want to let everyone know that I am now on Whole30 round 2, day 54. I am almost done with round two. I don’t think I will be a statistic of failure. I will get to day 60 and beyond! It has been great so far. I am now able to easily say no to foods I would gorge myself on before. That means a lot to me. Leaving sugars and processed foods really does do the trick. I feel so much better. My clothes are fitting looser. I still don’t know how much weight I have lost. Not going there yet. I have started exercising. So, I am hoping the pounds will shed as my muscle mass increases. Yay! Onward!

My Husband Hates Cooking … NOT! Thank you, Lord!

As I sat at work today listening to professional development and thinking about the many things I had left to do, I received an email from my husband asking me to come home and hurry. I, of course, had no intention of going home at the time I am supposed to go home.  What teacher does? Afterall, I had a bulletin board to put up. He kept asking me to come home and to hurry. My husband has a habit of acting like things are extremely important just so I can rush over to him. Most of the time, after I have rushed to him, he has nothing of substance to share with me. “Why would today be any different?” I thought to myself. I had made up my mind I would ignore him and continue my work. And, I did for about 45 minutes. Suddenly, I had a sudden pull to go home and I did just that. I put my work away and headed home and you know what? Thank the lord I did! He had cooked an amazing meal! I am not kidding. Probably one of the most tasteful meals I have ever had. Look below at the mouth watering goodness. #GoodChoice! Glad I came home. Whole30 Approved goodness in foil.

How Much Apple Cider Vinegar Should I Drink?

Before I go, I do have one other topic I have been hearing a lot about, apple cider vinegar. My husband purchased some apple cider vinegar because he heard about the craze and thought it would be a good idea for us to try it. I was willing to try it out because I had heard about all the benefits to the body as well. I mean there have been studies that show fat burning, weight loss, lowering blood sugar and cholesterol. That is pretty amazing!

I went ahead and tried it. Yikes! It sure does have a pretty nasty taste. Sorry, I’m not going to lie. I tried half a tablespoon in some water and will continue to do so for as many days as possible. Is there any side effect though?  I do not see anyone wanting to drink a lot of apple cider vinegar, but in the case someone has a strange love for this pungent drink, let me just say that too much apple cider vinegar could cause some side effects such as delayed stomach emptying which negatively impacts the ability to control sugar in people with type 1 diabetes. It also may cause issues with tooth decay, but only if you are drinking it undiluted and in a large amount.     1. LOl! I totally get it. I just did my third day and I am cringing at the taste. Wow! However, I have had several people tell me what I can add to make it taste better. Some said add honey, others said add lemon, mint leaves, etc… And, one mentioned buying the capsules. I had no idea they had ACV capsules. That may be a good alternative. Anyhow, I am glad it helped you with cholesterol. I don’t drink it with a lot of water. I just pour enough to take a shot of it with 1/2 a tablespoon of ACV, so I hope I see some benefits. Guess I will find out. Thanks for stopping by.
